Ohh, that's what I did!!
Have I mentioned I'm new to blogging? I scheduled a couple of blogs to post while I was at Camp Impact, or so I thought. I set the date and the time and pressed the DONE button. But, supposedly you have to also press the Publish button. Now I know...and I'll do better.
Carb Substitute
Almond Flour Tortillas
2 cups almond flour
1 Tablespoon ground flax seeds
2 cups almond flour
1 Tablespoon ground flax seeds
1/2 tsp sea salt
1/4 tsp ground cayenne pepper, or more to taste
2 large eggs
1 tsp + 2 Tbsp extra virgin olive oil
- Combine almond flour, ground flax seeds, sea salt, and cayenne in a large bowl. Add eggs and 1 tsp olive oil and mix thoroughly with a spoon until a nice dough forms. If it seems dry, keep stirring for a bit. If needed, add just a touch of water.
- Divide the dough into 6 equal portions. Roll each piece into a ball. One at a time, place each dough ball between two sheets of parchment and press with the palm of your hand until you form about an 1/4- to 1/8-inch thick circle.
- Warm 2 Tbsp olive oil (I used butter) in a large skillet (I used a griddle). Fry each tortilla, one at a time, in the hot oil for about 30-40 seconds on each side. Transfer to a double layer of paper towels to drain.
These were super easy, very yummy, and helped me not miss carbs on Taco Night. In the midst of making them, I thought, "If tortillas are this easy to make, why do we buy them...especially since the ones from the store are not as tasty?"
I will definitely be making them again!
